Gluten-free Strawberry Shortcake Muffins + GIVEAWAY TIME!!!!!!

 it’s monday baybaaaaay!


 i spent mine up in the gym gettin’ my sweat on and preparing for a busy day ahead.

Houston Sprouts Farmers Markets are having a gigantic strawberry sale this week!!!  the 16 oz crates are 88 CENTS each right now.  all i could think of was how much homemade berry-beet applesauce i was gonna make Dego. and myself. it is SO good, y’all.

so i still had tons of berries left after making applesauce and wanted to bake a healthy treat.  i got a little help from Dashing Dish to create this one and it’s pretty tasty! low-fat, gluten-free goodness that can be a great to-go breakfast, a snack, or definitely a dessert.  just add cool whip!


Low-Fat Gluten-Free Strawberry Shortcake Muffins

the stuff:

  • 2.5 cups Gluten-Free oat flour (i make my own using rolled oats in the Ninja Blender)
  • 1 cup 0% or 2% greek yogurt (i used Fage)
  • 2 eggs
  • 1/2 cup Stevia for baking
  • 1.5 tsp baking powder
  • .5 tsp baking soda
  • 1.5 cups diced strawberries
  • 1 tsp lemon juice
  • 1 tsp vanilla
  • dash sea salt
  • 1/4 tsp cinnamon

do this:

  1. set your oven to 350 degrees and coat a 24 count mini muffin pan with no stick cooking spray very well. NO LINERS NEEDED because they will stick to the muffin. #spoileralert
  2. i combined everything except the strawberries in my Ninja Blender! then i folded in 1 cup of the berries afterwards into a large mixing bowl. ***if no blender or food processor, combine wet w/ wet & dry w/ dry. mix together. fold in 1 cup of the diced berries last. 
  3. spoon the mixture 3/4th of the way full into each muffin slot.
  4. take the 1/2 cup of berries left and top your muffin batter with the pieces.
  5. OPTIONAL: mix a little granulated stevia and cinnamon in a small bowl, then dust the tops of your muffins with the sugar mixture. nice touch!
  6. bake 20-25 min or until an inserted toothpick comes out clean.

  3. Thanks for the tip about Sprouts and their strawberry sale! We prefer to grocery shop at Sprouts vs HEB. We love that place!

    We have 3 containers of strawberries in the frig and containers of strawberries in the freezer, too! We eat them straight out of the container, in smoothies, on pancakes, yogurt, in a bowl of cheerios and my favorite way is just adding them into a big bowl of mixed fruits!

    I would love to try the Arctic Zero Key Lime Pie! It sounds really good!

    Keep on making videos. I enjoy your workouts, the kiddos and when you make food!

    Since I’ve also had trouble finding the Artctic Zero Key Lime Pie—I’d love to taste that one. sn: Chocolate Chip Cookie Dough is the bomb!

    I’d love to see a video on how you make your chicken chunks/nuggets/pieces. My chicken never seems to come as pretty as yours. And yours seems like it’s easy for measuring as well.

  6. I love the simplicity of this recipe! I’ve followed your blog for a while now, and I love that you use items that everyone has in their pantry!

    When I use strawberries, I normally snack on them raw or in a smoothie because I never come across such simple recipes! I’ll definitely be trying this one out.

    Oh, and those AZ pints 😍 I haven’t tried the chunky flavors yet, but I’m sure key lime pie would probably be my go to! Can’t wait to find them in stores around me!!

    I eat my strawberries solo, in smoothies, in my morning oatmeal (love the paring of them with blueberries in my oatmeal. I also eat them in my salads that I make at home. Especially my go to salad of spinach/romaine, homemade honey glazed pecans, fat free feta, and chicken. I also use them to make my own homemade strawberry vinaigrette salad dressing.

    I am a simple girl and would like the “little bit chippy”.

    I like all your videos that pertain to your fitness, food, and family. If I had to suggest you do something specific, can you do a video showing a recipe for healthy eggrolls. your recipes are typically easy as well. I have seen other recipes but some of them seem so daunting…lol.

    I love your E book by the way! cant wait for the next one to come out!


  9. I eat my strawberries either plain or mixed with yogurt. I love them with cookie butter & dark chocolate chips for dessert…or almond butter! I also use them on top of my sons pancakes!!


  10. I typically eat my strawberries in a smoothie with bananas and vanilla greek yoghurt. If I got picked for the giveaway, I would definitely want to try the Key Lime Pie flavor. I found a recipe on youtube I while back that required pesto , chicken breast, low fat Italian cheese and tomatoes. You can make the pesto at home (that’s what I did) and place your chicken breast in a pan already sprayed with non stick spray. Season chicken with salt and pepper then put a dollop of pesto on each chicken breast. Spread out the pesto over the chicken breast then place slices of tomato on top then season tomato with salt and pepper. Then on top of the tomato , sprinkle some parmesan or Italian cheese of your choice and bake in oven for 15 minutes at 375 degrees. It is so delicious and you can eat it with a side of brown rice and steamed veggies.

  12. I love to eat my strawberries in a smoothie with peanut butter and almond milk! Mixed in some Fage Greek yogurt with a little granola is also a favorite of mine 🙂 I would love to try to chocolate chip cookie dough flavor if I won because cookie dough in ice cream just can’t be beat! As a new mother myself, I would enjoy seeing some videos about how you balance your time throughout the day, as well as some great home exercise routines that can be done quickly yet effectively! The gym is a little difficult to get to these days, but I want to keep a healthy routine. Thanks for always sharing!


  13. I really need to find a Sprouts in Dallas. I already miss out because there is no HEB out here. The struggle! I loooove strawberries and eat them all kinds of ways: solo with whipped cream, in a breakfast smoothie, as a part of a spinach salad or with oatmeal.

    If I won, i would definitely get key lime pie. It’s one of my favorite things to eat! I’ve never tried Artic Zero and honestly had never heard of it until your posts.

  14. I usually eat my strawberries in a smoothie with almond milk and peanut butter! Mixed in with some Fage Greek yogurt with a little granola sprinkled on top has become one of my favorite snacks too! If I won, I would love to try the chocolate chip cookie dough flavor because cookies in ice cream just can’t be beat 🙂 as a new mother myself, I would love to see some videos dedicated to at home workout routines using minimal equipment that can be done quickly but would still be effective. Oh! And maybe a video about how you shop and what you buy to stay on a budget. Thank you for sharing!


  15. I like my strawberries dipped in chocolate of course! haha but I usually have them cut up in Greek yogurt with protein granola. I want to try all these flavors so bad but can’t find them anywhere around me. It’s been tough looking for them too because I’m 39 weeks pregnant and full on waddling. I especially would want to try the cookie dough since I haven’t been able to enjoy cookie dough in 9 months.   17. I love strawberries just the way they are. They are so good by themselves, sweet, juicy and flavorful!! Sometimes I put jen in my oatmeal or in smoothies for a natural sweetness. I have never tried that ice cream before, but anything cookie dough is my absolute favorite!!!

    As far as a video goes, and thing related to getting a quick workout in while the kiddos sleep would really be helpful, or anything to help get the kids to eat their veggies. I know you post about this stuff already but the more helpful tips and workout the better! Thanks for being a daily inspiration

  20. I absolutely LOVE strawberries, I love them in smoothies, froyo, mugcakes, strawberry shortcake, cheesecake, PB&J sandwiches, banana bread, salads, muffins, the list goes on and on and on! If I won I would definitely get the key lime pie flavor. It’s such a unique flavor and I cannot wait to try those chunks of graham crust!   21. Call me boring, but I prefer my strawberries fresh, plain, and in season. I would definitely have to try the cookie dough Arctic Zero, I haven’t had cookie dough ice cream since high school when I stopped eating so much refined sugar. Love your youtube videos, keep it up!

  23. I like to eat my strawberries with the center cut out and filled with some protein powder infused yogurt. I love actic zero and have not been able to find the key lime chunky pint! That’s the flavor I really want to try. I would recommend fitmencook on YouTube or instagram. His videos and recipes are amazing!
