pancakes, cookies, & a 10K

goooood sunday morning, from me and my little hams!

so ever since i showed off my dinosaur pancake making skills Chiso has requested them only EVERY DAY since then.


 a simple empty squeeze bottle is all ya need, then let your creativity take ova!  i have been making everything. no, forreal. i’ve yet to tell him ‘hmmm…..  sorry, mama can’t make that, buddy.’ there is no wrong way to do this!  even if you mess up, it’s still edible. you see i destroyed that (whatever that was) up there in the pic and just pushed it to the side and ate it myself later.  i try to make it educational and do numbers, counting, letters, words, shapes, etc… whatever comes to mind. long as it’s FUN. he eats it all up, literally. this recipe is pretty basic and i make it according to what i have in the fridge at that time to be honest:

toddler approved healthy whole wheat pancakes

the stuff:

  • 1 cup whole wheat pastry flour
  • 1 cup unsweetened vanilla almond milk
  • 2 heaping tbsp unsweetened applesauce
  • 1 whole egg
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1 dash salt
  • 1 tbsp coconut oil, melted (optional)

do this:

  1. blend thoroughly until smooth
  2. pour into squeeze bottle

you can also sub greek yogurt for the applesauce.

someone had another great day in the infant room.

the Texans played today, so we headed right back home afterward (only cause i wasn’t driving).  Thanksgiving is in 4 days and i’m in a cooking/baking mood already! i made these Peanut Butter Chocolate Chick Cookies from my e-book while prepping some meals for Sonny and i.




 you can actually follow through with baking them or just eat the dough as is. hey, it’s egg and dairy-free. treat yoself.
